In the United States, we like to say that things are as American as apple pie. But maybe it would make more sense for us to say that things are as American as the taco.
Tacos predate the arrival of Europeans in North America, and over the centuries, they’ve evolved from a Mexican food staple to one of America’s greatest fusion cuisines.
These days, there are kimchi tacos, waffle tacos, and kosher tacos. There are the tacos we get in trucks and those we get at chains like Taco Bell. There are the Old El Paso taco fixings we buy at the grocery store, and the fixings we harvest from our own gardens.
There are so many ways to eat tacos and so many conversations to be had about them that Fronteras has put together a five-part series about the cuisine, which is airing all this week.
One person who’s part of that series is David Martin Davies. In addition to being a lifelong lover and researcher of tacos, Davis is the news director of Texas Public Radio in San Antonio.
